The Softest, Healthiest Bread Rolls in the World!

Makes 6 bread rolls


These are the rolls of your dreams! They are soft and tender, can be served warm or cold and are just as good, if not better, the next day. Although the taste and texture of these rolls are fabulous, the fact that they are so simple to make is reason enough to have them at your next meal.

Ingredients

  • 120 g (4 oz) almond flour/meal or another nut or seed flour or your choice
  • 20g (⅔ oz) coconut flour
  • 25 g (0.9 oz) psyllium husks
  • 10 g (⅓ oz) Pure as Inulin Powder
  • ½ tsp mineral salt
  • 1 ½ tsp baking powder
  • ½ tsp baking soda (bicarb soda), sifted
  • ½ tbsp apple cider vinegar
  • 1 tbsp extra virgin olive oil
  • 200 ml (7 oz) Kombu Water, warmed to blood temperature 

Optional toppings

1-2 tbsp of sesame seeds, poppy seeds, za’atar spice blend, hemp seeds or nutritional yeast

Method

  1. Preheat your  air fryer on 190C (385F) or the oven on 200C (390F)
  2. In a mixing bowl, combine the almond and coconut flour, psyllium husks, inulin powder, salt, baking powder and soda, stirring to mix well and remove any lumps. 
  3. Add the vinegar and oil, followed by the warm kombu water, and stir well to form a soft dough. Knead the dough gently with clean hands, and then leave it to sit for 5 minutes, which will help it firm up a little. 
  4. Evenly divide the dough into 6 portions, and each roll should weigh 65-70 grams (2.2- 2.4 oz). Roll each piece into a ball. Place the balls on a roasting tray or in the air fryer, leaving them set slightly apart, but no need to allow too much space as they don’t rise much. 
  5. Brush the tops with a little water and sprinkle over your chosen topping. Bake in the oven for 25-30 minutes or in the air fryer for 20-22 minutes or until the outsides are golden brown and crisp. When the bottom of the roll is gently tapped, it should sound hollow. 
  6. Allow the rolls to sit and cool for at least 20 minutes before cutting and consuming them. This will allow the rolls to cook through completely with the latent heat still present. Cutting them too early could cause the dough to be a little undercooked inside. 
  7. These rolls store very well in the fridge for 4-5 days and can be reheated in a hot oven set at 200C (390F) for a few minutes before serving.
